Chocolate Shortbread Ice Cream Sandwich

This is a great little recipe to help keep the kids or grandchildren happy during the summer holidays!

Delicious Chocolate New Forest Shortbread and vanilla ice cream is a winning combination!

Chocolate flavoured New Forest Shortbread

Vanilla Ice cream

Line a baking sheet with parchment paper. Scoop vanilla ice cream into 6 balls – about 3 tablespoons per scoop.

Cover ice cream with another sheet of parchment paper then gently push the ice cream balls down to fit the width of the shortbread.

Sandwich one pressed ice cream ball between two shortbread.

Enjoy immediately or freeze for up to 3 months!
