Deep in the New Forest National Park, our small bakery at Burley Rails Cottage produces something truly special each day - delicious handmade New Forest Shortbread. What began over 50 years ago in founder Tracy Thew’s kitchen has evolved into a much-loved artisan brand, but our baking methods remain beautifully traditional.

No two shortbread biscuits look exactly alike and that’s part of the charm. Slight variations in colour and shape are the hallmark of genuine artisan craft, created by a team who understands the fine details of dough and texture.

Tracy leads a small, roup of local people who each play a part in bringing our shortbread to life. Their hands create every biscuit; their dedication ensures consistent flavour, freshness and that signature melt-in-the-mouth feel in all flavours of New Forest Shortbread.

We take inspiration from the landscape around us, using recyclable packaging decorated with illustrations by local artists and sharing snippets of New Forest history and wildlife on each box.
