Every day, as we bake at Burley Rails Cottage, the beauty of the forest sits just outside our doorstep, shaping not only our surroundings but the very essence of New Forest Shortbread.
The Forest’s charm lies in its contrasts: the soft moss underfoot, the bold colours of the heath, the warm glow of the woods in late afternoon and the wildlife that quietly moves around us. This richness and variety inspire everything we create. Just as the Forest is never uniform, our handmade shortbread carries its own natural variations. Each shortbread biscuit is slightly different in shade and shape, each batch with its own personality. It’s the artisan nature of the forest, captured in a bake!
Each year, our packaging features New Forest inspired artwork and snippets of Forest stories — sharing local history, wildlife, traditions and hidden corners of this remarkably special place. We want everyone who opens a box to feel a little closer to the Forest we’re so proud to call home.
Some of our flavours are directly inspired by the landscape: the herbal freshness of Rosemary New Forest Shortbread, the earthy richness of Coffee New Forest Shortbread roasted nearby, or the comforting warmth of festive spices that pair perfectly with winter walks among the trees.
